Crock Pot Flank Steak Fajitas

cp fajitias 2I stumbled across this recipe and despite our reservations we tried it. I really didn’t think it would turn out good but we’ve made it twice with a little bit of doctoring  and it’s AWESOME!

Go here for the original recipe. It’s good, but it was a bit bland so we added our own flare to it.

What you Need:

1.2-2lb Flank Steak (if you want leftovers then go a little bigger)

1 packet Fajita Seasoning Mix or 3 TBSP Homemade Mix

1 medium onion sliced and separate the rings

1 small red bell pepper

1 small green bell pepper

1 small yellow bell pepper (optional)

1/2 cup water

2 Tsp minced garlic

3 oz tomato paste

1 can Rotel (drained)

Spray Crockpot then place whole piece of beef  in bottom of the crockpot. Add seasoning,  minced garlic , and then 1/2 of drained rotel. Seed and cut peppers into stripes. Add peppers and onions.  Next, add tomato paste, rest of rotel.  Last pour water over the top and set crockpot to cook on low for 4-5 hours (or until meat is done).

The first time we cooked this, we cooked it too long (the meat shredded) and I added extra water because I thought it was too dry.  Don’t do that!cp fajitias

Serve with your usual fajita toppings.
